River & Hills is a small-batch chocolate maker working with Indian cacao. We focus on purposeful selection, deeper refinement, and honest formulation - creating couverture chocolate that performs reliably in professional kitchens.

Our vision is to elevate the Indian-origin cacao to global recognition, so that the world sees India not just as a producer, but as a creator of fine chocolate.

Origin - Farm to Bar

The name River & Hills reflects the landscapes we work with - the West Godavari region in Andhra Pradesh and the hills of Idukki, Kerala - whose origins shape our chocolate.

These regions differ in climate, elevation, and post-harvest practices, resulting in distinct flavor profiles and functional characteristics.

We work with farmers and local partners to improve fermentation consistency, drying control, and storage - focusing on long-term reliability rather than short-term yield.

Craft

Working exclusively with carefully selected A-grade cacao and clean, 100% vegan ingredients, roasting is calibrated to each origin and batch to allow the cacao’s natural character to develop with clarity and balance.

The chocolate is then conched in a stone grinder over extended durations, refining particle size to a level preferred by professional kitchens while preserving flavor integrity.

Precise tempering ensures stable crystallisation, delivering consistent performance, clean snap, and reliability across applications.

Roasting

Carefully controlled roasting reveals depth and complexity while preserving the integrity of the cacao

Conching

Extended stone conching reduces particle size to below typical sensory thresholds, delivering a smooth texture suited to professional use

Tempering

Precise tempering ensures stable cocoa butter crystallisation, resulting in reliable setting, gloss, and snap

A balanced 50% dark couverture combining Godavari and Idukki cacao, with added cacao butter pressed from Idukki beans, developed for versatility, smooth texture, and consistent professional performance.

56% Dark Couverture

A 56% dark couverture made exclusively from Godavari cacao, formulated at three-drop fluidity for smooth handling, balanced texture, and reliable performance in professional kitchens

64% Dark Couverture

A 64% dark couverture formulated for serious bakers, blending predominantly Godavari cacao with Idukki beans to deliver depth, structure, and controlled intensity in dark chocolate applications.
